People all over the world know Mariam’s nutloaf. Everybody who tried it, loved it. Personally, I would start every day with a slice of nutloaf … warmed up and buttered.
At first, she made only two large nutloafs at a time. But she found that she was giving away so many that it became hard to keep up. So I suggested she get smaller trays and make more, smaller nutloafs. She went from making two at a time to eight at a time. So many more to give away!

Fun Fact: Mariam had two versions of nutloaf. The “deluxe” version included saffron, which added another subtle flavour.
Many people over the years have asked Mariam for her nutloaf recipe. So here it is, in Mariam’s own words:
CARROT-ZUCCHINI ALMOND NUT LOAF RECIPE
DRY INGREDIENTS SPICES
1 cup quick rolled oats 1 teaspoon (tsp) ground cinnamon
1 ½ cups spelt flour 1 tsp ground cloves
½ cup whole wheat flour 1 tsp ground nutmeg
½ cup kamut flour I tsp ground cardamom
1 tsp baking powder
1 tsp baking soda
WET INGREDIENTS
5 eggs
½ cup yogurt
1 cup vegetable oil
1 cup milk
½ cup freshly squeezed orange juice or regular orange juice
1 cup brown sugar
1 medium carrot – grated
1 medium zucchini – grated
1 tablespoon vanilla
1 tsp saffron – in small bowl mix in little warm water and set aside
1 cup nuts – combination of sunflower seeds, walnuts, chopped almonds, pecans
In large bowl mix together flour, baking powder, b soda & spices
In separate bowl mix together wet ingredients, carrot & zucchini
Add saffron & vanilla to wet ingredients, mix well together. Then add nuts to mixture.
Mix everything until all ingredients are well combined.
Pour into two 9 x 4 inch pans (I use silicone pans – easy to use & clean)
Bake in oven at 350 degrees for 1 hour and 15 minutes
Let sit for approx. 7-10 minutes and remove loaves from pans

I just had to see this. I last saw Mariam in 1998 and did not manage to rdv with her in 2017 when i was in Toronto I am going to have a go at her nutloaf recipe. Sounds delicious
